I promised a post about slow-cooked pork leftovers, and I ain’t trying to disappoint my faithful readership.

Before we get going on this particular dish, I must note that there is only one picture of this meal, and it is not a very good one, and this is because the thing smelled (and, we later discovered, tasted) so good that V kept saying “STOP TAKING PICTURES THE FOOD IS GETTING COLD” and I gave up.  Hey, sometimes tummy gets in the way of documentation-for-posterity, even for this devoted bloggist.

This was oven-baked sweet potato cubes, tasty pork, and poached eggs, with a sprinkling of cheddar cheese and hot sauce.  And some guacamole.  And, you know, some Romanesco because I’ve always wanted to try that stuff.  Yup it tastes just like cauliflower but is cooler looking and thus way awesomer.
